Power Honey Glazed and Dazed Roasted Root Veggies
∙ 5 ½ pounds root vegetables, (any combination of parsnips, carrots, celery root and beets, peeled and sliced ½ inch thick.)
∙ 1/2 cup extra-virgin olive oil
∙ 1/2 cup or 4 oz. Natural Cannabis Company Power Honey (unflavored)
∙ 6 thyme sprigs
∙ Salt and freshly ground pepper
∙ 2 tablespoons sherry vinegar
∙ Toss the root vegetables with the oil, honey and thyme in a bowl.
∙ Season with salt and pepper.
∙ Spread veggies in one layer between 2 baking sheets with sides, and cover with foil.
∙ Roast in a 425 ̊F oven for approximately 20 minutes.
∙ Turn pan and roast for 20 more minutes, or until veggies are tender.
∙ Uncover and discard foil.
∙ Roast for 10 more minutes, before returning the vegetables to the bowl and tossing with vinegar, salt and pepper.
